I want to share with you all a new staple in my life, as in it’s ALWAYS in my refrigerator now, and if it’s not, I freak out and make some lickety split! AND it is ‘almost’ mess-free to make in under 7min. But before I do that, as I sit here eating my Wild Planet Tuna mixed with some homemade mayo mixed with Frank’s, I wanted to share some reflections of what today, February 8th means in our lives.
This day last year due to the restructuring of my husband’s company through an acquisition, him and countless others were surprised with the news that they no longer had a job. He told me not to worry and that it would be ok, but I was devastated. As a stay-at-home mom with 2 small kids, that’s some scary news. There’s so many details that I’m skipping, because a year is a long time, but God has been so faithful. I’m very hopeful that today, on February 8th, 2018, we will hear some good news and be able to celebrate a job offer and change that’s on its way. I wouldn’t trade this season for anything because of the valuable downloads that I’ve received from God, that I only heard because I was so desperate to hear from Him. He’s spoken into my life in ways that I never knew were possible, and I hear from Him every single day. I have a hunger and a thirst to hear His voice every single day, and I don’t go a moment without falling more and more in love with my God. Because of this event and circumstance, I learned to hear the voice of God that’s always been there, but that I couldn’t hear before. So I wouldn’t trade this season for anything, but I definitely never want to relive the circumstances again.
Back to the topic of my favorite thing EVER!!!! So, I love hummus, I always have, but since my first round of the Whole30, I found out that beans are not my friend. I get terrible stomach pains and as much as I love hummus, it just wasn’t worth it. Right before Christmas I decided to try out the low carb, high fat ‘keto’ diet/lifestyle/way of eating, and it was in the midst of learning about this new-to-me way of eating I found out that I could make cauliflower into hummus!!! Not only was it delicious, amazing and totally new to me, but my stomach wouldn’t hurt after eating it! WooHoo!!! I found several recipes and tweaked/combined them all to fit into my lifestyle and my taste, and I just had to share my version. I get many requests to make this, and instead of trying to reiterate my version, I’ll post it here so I can pass it along to anyone who’d like it.
My favorite way of eating this hummus is with Elana’s Pantry’s Low-Carb Flax Bread that I make into a loaf almost every week. It’s so yummy, I freaking LOOOOOOOVE this bread, so make this too: https://elanaspantry.com/flax-focaccia-becomes-parsely-bruschetta Serve sliced and toasted.
- 1 12oz Bag Frozen Cauliflower ([email protected])/3 Cups Raw Cauliflower
- 5 Tbsp Avocado Oil/Light Tasting Olive Oil
- 5 Garlic Cloves
- 3 Tbsp Lemon Juice
- 1 tsp Salt
- *Sprinkle of Smoked Paprika*
- Empty bag of Cauliflower in a pot and fill with an inch of water.
- Steam the cauliflower until no longer frozen or raw, 5-7min.
- While the cauliflower steams, add the rest of the ingredients to your Bullet or Blender EXCEPT the smoked paprika.
- Drain out the water from the cauliflower and pour the drained cauliflower into your Bullet or Blender.
- Blend until completely smooth.
- Empty contents into a bowl or container and drizzle with oil and sprinkle with the Smoked Paprika.
