There’s hope! There’s always hope folks…
I haven’t been in a good headspace for a very long time. Coming up on two years actually due to hormonal imbalance after I stopped breastfeeding our youngest. And to top that off, it’s coming up on one year since my husband’s company decided to restructure his division out of the company, leaving us with no corporate job. It’s been a tough season to walk through and to keep walking through, honestly. We know that God will make a way in His perfect timing and cannot wait for that to happen and I will definitely be doing a Celebration blog post, believe me!!!
My headspace has been redeemed! I did everything I know to do and it didn’t work. I started taking Selenium and Iodine, (suggested by a holistic doctor), and that was a game changer, but it still wasn’t enough. Right before Christmas, not sure what triggered it, but I decided to try the Keto diet. I see a lot of people in the Whole30/Paleo community are trying it, and thought, why not? I’ve tried everything else! I committed to it, stuck with it, had no regrets about missing out on certain Christmas foods, (although I did have 1 tamale and 1 small piece of Chantilly cake), and I saw change!
I’m happy again! Maybe the happiest I’ve ever been outside of my first pregnancy… This tells me that my hormones are balancing- FiNALLY!!! And my brain is really happy! *High Fives* Your brain feeds on healthy fats, so obviously lots of healthy fats make a happy brain!
I haven’t been counting anything other than carbs, trying to stay around 20g/day. I picked up a couple of cookbooks at the library to get on track for meal plans. It’s not much different than the way I was eating before except no carbs, like not even any potatoes, which kind of stinks, but I wouldn’t trade for the way I feel. I can do cheese here and there, but 2 others in my family absolutely cannot do dairy, so luckily there’s so many dairy free cheeses, cream cheeses etc. My new Instant Pot that my parents got me for Christmas has been like AWESOME!!! So many great low carb recipes! Most Whole30/Paleo recipes are low carb, just keep out potatoes, maybe sub cauliflower and obviously no sugars. I found a great non-gmo, derived from sugar cane sweetener, Erythritol, on Amazon that I really like- click here.
So I put together a recipe for you. No official nutritional info other than it’s no more than 2g net carbs and about 16g fat per serving. Perfect for any diet. And if you aren’t doing low carb feel free to use honey or coconut sugar to sweeten. I, personally, can’t live a day without Turmeric, I take a supplement. I have chronic tendinitis in my elbows and plantar fasciitis in my feet, turmeric has pretty much healed them by taking away the inflammation. ANDDDDD I’m really not a golden milk latte type of girl, but this, it’s good. Don’t let the idea of turmeric steer you away, just try it 😉
- 1 Can/Carton Full Fat Coconut Milk (I use So Delicious Culinary)
- 2 Tbsp Chia Seeds
- 2 tsp Erythritol
- 1 tsp Ground Turmeric
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Pure Vanilla
- **Toppings: Pepitas, Unsweetened Shredded Coconut, 1Tbsp Blueberries
- All all ingredients into a mason jar (or bowl) and combine thoroughly. Put a lid or cover over it and refrigerate over night, or at least 4 hrs.
- **Toppings are optional
- Approx. 16g Fat and 2 Carbs per serving.
