Hey guys! I’ve been MIA for a loooong time… A lot has happened over here at the homestead. My husband’s company did layoffs. He walked into the office with a job and out without one. It was a complete shock as they were supposed to be done with the re-org from the merger. So, he’s been looking for a job for 7wks now. If you know of anyone looking to hire an IT Sales Rep, please let me know! It’s been quite a transition. So, he’s been using my laptop all day, every day, (which has been a transition for me as well) and I haven’t been able to do what I love to do, which is share great stuff with you! I confiscated it so I could write this 😉
And after a nearly 2 month wait time, my cat ran away after I typed the first paragraph. We went on an hour hunt to find that he jumped off of our 7ft retaining wall into the forest behind us that is loaded with coyotes and bobcats. Thankfully we did find him, (he would’ve never been able to get back up due to neurological damage from surgery that doesn’t allow him to jump very high), and now he’s down another life. I think he has like 4 lives left… And my husband almost murdered me for allowing the cat to sunbathe, I think I lost a life too 😉

I promised like a week and a half ago that I would post my Cinnamon English muffin recipe that I’ve posted a few times. It literally takes 2min to make, plus toasting time. It gives me the total satisfaction that I need from occasionally missing any type of bread (I’m allergic to gluten, rice, soy and corn so can’t even do gluten-free bread). And It’s super easy to make whenever bc who doesn’t have 2min?! And you gotta slather that thing with some yummy grass-fed butter!
- 1 Egg
- 1 tsp Melted Butter
- 1 Tbsp Water
- 1 Tbsp Coconut Flour
- 1 tsp Psyllium Husks/Ground flax/Almond Flour
- 1/2 tsp Cinnamon
- 1/2 tsp Coconut Sugar
- Pinch of Baking Powder
- Whisk together the egg, melted butter and water in a small microwavable bowl or ramekin.
- Add the coconut flour, psyllium husk (or ground flax or almond flour), baking powder, cinnamon, and coconut sugar. Whisk until there are no lumps.
- Microwave on high for 1 ½ minutes, until it is cooked through.
- Slice, toast, and slather with butter!
