Piña Colada about sums up all things summer, right? To me, it doesn’t get much better than pineapple and coconut. In fact, our wedding cake was a piña colada cake. Obviously there’s a serious love with this tropical combo. Last night, when watching the best that trash tv has to offer- Bachelor in Paradise, I decided to make my own, drama free paradise combo for breakfast the next day. Who knew one could get recipe inspiration from trash tv??? Seriously, ha!
My husband got this cold pressured (is there a difference between cold-pressed and cold pressured?) pineapple juice at Costco, and it’s DELiSH! First off, I had no idea pineapple had protein in it, second there’s only 7 sugars in a little over a cup. That’s pretty awesome to me. Maybe I just had really low expectations or something… So that makes this chia pudding have 7 grams of protein per serving, 14g total. That’s pretty darn good for a chia pudding. And let me tell you, you definitely don’t need to add any sweetener. This pineapple juice did a mighty fine job- I highly recommend it!
I really do think that the Bachelor took it way too far in allowing Chad’s nonsense behavior to air. I mean seriously, allowing his demeaning, disrespectful, cruel behavior did not make me want to watch the show more, it made me never want to watch the show again. I really cannot believe it. They chose to let the public see him ridicule an innocent bystander that was born with half an arm. That’s just sick! I hope they get so much hate mail for that. I really do. Now that you know think I’m one of those crazy trash tv watching fools, I’ll share my recipe with you that hopefully redeems my character 😉
- 1/2 Cup Cold-Pressed Pineapple Juice
- 1 Cup Full Fat Coconut Milk
- 1/4 Cup Chia Seeds
- 1 tsp Cinnamon* (optional)
- Combine all ingredients and blend- blender/bullet/immersion blender.
- Refrigerate overnight.
- Top with fruit, unsweetened coconut flakes/shreds, and/or nuts.
- * I love cinnamon and it takes on a type of roasted flavor to me with it.
