I got a new, awesome recipe for you guys. It’s a whole lotta protein, so don’t let the cute “quiche” word fool you. But first let me tell you about our awesome weekend we just had.
For our 9yr anniversary we opted for a trip to a Copa America game. We live in Dallas and the closest games were in Houston. Surprisingly it was cheaper for us to go to a game in Arizona than Houston. Isn’t that strange? I was actually thrilled, bc honestly, who wants to hang out in Houston over AZ? (no offense Houstonians) We took the first flight out of Dallas Love, landed in AZ, grabbed some bottles of water and hiked straight up Piestewa Peak. Whew, that was a tough one. I attempted the climb 7.5mo pregnant 4yrs ago, and now I know why I couldn’t make it to the top. It was straight up y’all! Like we had to grab onto the rocks to get up. And to make it that much more intense other than the sun and 110 degree temps, we had 80yr olds smoking us! Just straight up leaving us in the dust. This is why I want to move to AZ people. 80 yr olds smoking my fit self? The fountain of youth is obviously there, somewhere in those desert mountains. I asked a guy “How are you passing us?” He said, “I’m young and strong!” One day, we will live in Arizona. I will have coffee with all the older folks and they will teach me ALL the secrets!
After that, we checked into our hotel that we got married at, unfortunately they’re changing ownership yet again (they did this weeks before our wedding with a name change as well- thx! Think wedding invitations, already sent, yeah….) The place has such a cute, boutique resort feel. We hung by the pool for a bit, I had an awesome mojito. After that we got changed up and headed towards the game. US vs Columbia for 3rdplace in the 100th year of Copa America. We stopped at a dealership on the way (BFlo is in the market for a new ride), had an INCREDiBLE burger at Zinburger and then got some great coffee in downtown Phoenix. The game was interesting- great game for Columbia, horrible game for the US. It was straight up embarrassing for the US. But don’t worry, hardly any US fans were there…
After the game, we went back to the hotel, changed into dinner attire and went out to find a good place to check out. We ended up at Sol Cocina in the Kierland area. I had some of the best ceviche I’ve ever had in my life. I was ridiculously impressed. What was even more awesome was that they served it with homemade sweet potato chips- brilliant! We were way too tired to do anything else at this point. 4am alarm for our 6:30am flight had us downright tired. We crashed and then started another crazy, fun day!
Pre hiking treat was a Breakfast Buzz from D’Lite. Def check them out. We did the Holbert Trail at South Mountain. It was probably one of my favorite hikes EVER! It was beautiful, fun, challenging but not crazy, we seriously loved it! After the trek we fueled up on some more caffeine at an old time favorite- Cartel Coffee. Hit the pool at the hotel for a bit, packed up.
After some shopping and a quick bite to eat, we headed over to Tommy Bahama Café where we got a piece of our wedding cake! So cool that we order our cake from them for our wedding, and that we can go back every year and splurge. It’s a Pina Colada Cake, not too sweet, not dry, very creamy, tasty cake. So so good! We had a short, but very refreshing 36hr getaway, packed in a whole bunch of stuff and really enjoyed taking some time for ourselves.
Onto what you really clicked over to check out- Meat lovers crustless quiche! Holy Meat, it’s good stuff. Of course anything with bacon is- duh. This protein packed dish is great for literally any meal, leftovers are awesome too. Enjoy!
- 1lb Ground Turkey or Beef
- 1 Cup Rotisserie Chicken
- 5 Strips of Bacon, cooked
- 8 Eggs
- 1/4 Cup Coconut/Almond Milk
- 1, 14oz Can Fire-Roasted Tomatoes
- 2 Handfuls Fresh Spinach
- 1 Tbsp Chili Powder
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/2 tsp Salt
- Preheat oven to 375. Grease casserole dish.
- Cook bacon (I cook in oven on 400 for 10ish min).
- Brown ground meat in skillet (medium heat). After the meat has browned, add seasonings.
- After meat is browned, add chicken and chopped bacon and mix.
- Next, add can of tomatoes and 2 handfuls of fresh spinach. Once all is combined, dump the mixture into your greased casserole dish.
- In a bowl, whisk eggs and coconut/almond milk together.
- Pour the egg mixture over the rest in the casserole dish.
- Bake for 30min, or until eggs are no longer jiggly.
